Just got back from a food and hospitality networking event hosted by Leapfrog PR at the newly refurblished Ellenborough Park Hotel, such a beautiful venue. We were treated to delicious canapes, made by Executive Chef David Kelman, who has a great passion for using local Gloucestershire produce. This was the theme of evening and this type of food passion is spreading though Gloucestershire.

Both Hotel Du Vin and The Montpellier Chapter are also great supporters of local food. Only last week Hotel Du Vin held the launch of the Gloucestershire Echo and Citizen's Taste of Gloucestershire Food and Farming Awards. Great new awards aimed at raising awareness of what is grown and produced on our doorstep.

M.E. Awareness Week

This week is M.E. Awareness Week and we will be helping to raise much needed funds by donating a percentage of our total overall week’s sales, as well as selling M.E. wristbands from our kitchen unit and at our Cheltenham Farmers Market Stall. The funds raised will be sent to Action for M.E., the UK’s leading M.E. charity to help support suffers, carers and fund more research into the illness.

M.E. is cause close to my heart which is why she wanted to help. I have been suffering with the illness for the past 12 and half years. I first became ill in her early teens and was bedbound for over a year with utter exhaustion, constant muscle and joint pain as well as increased sensitivity to sound and touch.

Part of the reason I started the Vanilla Pod Bakery was so I could look after my health and work my own hours. The business is demanding but it allows me the flexibility to choose when I am healthy and able to work. Raising funds this week is vital, however, it won’t stop there for us, as I would like to encourage more people to learn about M.E. and help raise funds through a variety of different activities, please contact me if you would like to help.

M.E. affects men, women and children of all ages and of all social and ethnic backgrounds and it is currently estimated that around 250,000 in the UK have the illness. The National Institute of Health and Clinical Excellence says it can be “as disabling as multiple sclerosis, lupus rheumatoid arthritis, congestive heart failure and other chronic conditions”.

Farmers markets

There is something so lovely about visiting a farmers market, especially in sun. It is a wonderful shopping experience. I can never resist the tempting food from the other stall holders. Vanilla Pod has a stall at cheltenham farmers market on the 2nd and last friday of every month, and a stall at gloucester farmers market on the 1st and 3rd friday of every month.

The 2011 Vanilla Pod Wedding Season begins!

This week was the start of The Vanilla Pod Bakery's 2011 wedding season, and commenced with a traditional single tier wedding cake.

Over the weekend we had two cupcake towers to set up, the first at lovely Bowden Hall in Upton-Saint-Leonards and the second at the magnificent Clearwell Castle in the Forest of Dean.

Heart shaped cakes and flags

The other day Vanilla Pod was commissed to make a bespoke cake in the shape of a heart with two different flags joining each other in the middle - a union of two cultures/countries. As I love a challenge I relished the opportunity and couldn't wait to start baking and creating.

I baked a lemon heart shaped sponge and covered it with red sugarpaste and then got to work on the flags. At first I thought about painting the flags into the cake. However I love to fashion objects out of sugarpaste, so decided to go ahead with that method. I created a Zimbabwean flag and an Australian flag then placed them onto the heart. I have to say I was pleased with the results and the client was over the moon.

Farmers Markets and Lots of Cakes

Yesterday we were selling our yummy cakes at our first ever Stroud Farmers Market of the year, what a lovely market. It was very busy for a cold January morning there were lots and lots of delicious types of food on offer. To help keep warm I was munching on a fab five spice pork curry from Niang's Thai Snacks and samples of our very own Vanilla Pod Bakery chocolate brownies!

I am really enjoying the farmers markets at the moment (even though its bitterly cold!) as it is a chance for us to experienment with different recipes. We had lots of cakes on offer including our yummy cupcakes as well as sticky ginger and orange slices, wedges of classic victoria sandwich and our very chocolatey brownies which had sold out by 12pm! And my favourite, toffee apple crumble slices - ummm I am salivating just thinking about them now, delish.

We are constantly looking through recipe books and are always open to new ideas, so please do not hesitate to let us know if you want a particular type of cake or bakery treat to be baked by us.

We will now be at a farmers market every Friday (Cheltenham on the 2nd and last Friday of the month and Gloucester on the 1st and 3rd Friday of every month) and will be a Stroud market once a month on a Saturday. Check facebook or our website for more details.

Happy New Year Everyone! (I can't believe it is 2011 already - the last decade has just flown by!)

I had a lovely Christmas break and I have to say I am glad to be back baking. I really miss the Vanilla Pod kitchen and whipping up something delicious, when I have been away for a few days.

The one thing I am not to happy about, and I am sure most of you feel the same, is the VAT increase. I can understand the Government needs to claw back money, but is this really the right way of going about it?

But hurrah hurrah the price of Vanilla Pod cakes* are staying the same so why not:

"Beat the VAT, banish the colds and celebrate with a slice of cake!"

Let It Snow!

The weather outside may be frightful but the festive treats at the Vanilla Pod Bakery are just delightful…!

So today was the first day of advent, Christmas is literally round the corner people! Remember we are baking up until Christmas Eve so get your orders in, the diary is filling up fast.

The bakery has been full of amazing festive aromas over the last few weeks, Mince Pie & Butter Brandy flavour cupcakes, Chocolate orange and also Christmas Cranberry as well as our new and ridiculously popular tray bakes. Our favourites include Orange & Marzipan and Cherry & Coconut – get them while they’re hot! Not to mention the hundreds of mince pies that flew out of Vanilla Pod last week, well 1,251 to be precise.

As well as baking into the small hours and manning the flagship Cheltenham farmer’s market stall, we’ve been out and about all over Gloucestershire over the last month or so at some great events. A couple of weeks ago, Pia spent the day at the Enterprising Women Make a Difference Conference at Kingsholm where she meet over 150 other hard working and ambitious women and stood up and addressed the whole conference with the story of Vanilla Pod Bakery and her journey so far. Whilst understandably nerve racking and a little bit scary it was a thoroughly enjoyable day and the network opportunities were great… Today Gloucestershire, tomorrow the world, girl power!

Other events included a great shopping event at the beautiful Washbourne Court Hotel in Lower Slaughter and last weekend was the Victorian Market at Gloucester Quays and despite the arctic conditions we had great fun dressing up and getting into the festive by-gone era spirit. The market looked beautiful and all the enactments and actors dressed up really added to the atmosphere. We hope everyone at the Quays enjoyed every last one of the delicious 1,251 mince pies…

So despite the diary being choc-a block with orders we’ve also managed to squeeze in some more festive events before Christmas. This weekend (3^rd - 5^th December) we will be at the Cheltenham Connect’s Regency Christmas Craft Fair (www.cheltenhamconnect.co.uk), following on from their first successful event last year. It’s a great event where everyone gets dressed up and really into the spirit of things and with over 40 exhibitors selling lots of gifts and locally sourced products it’s a great opportunity to buy some unique and hand made Christmas gifts and of course our delicious Vanilla Pod festive treats. Come and find us in the tented village at The Exmouth Arms, Bath Road, Cheltenham GL53 7LX.

On Tuesday, 12th October Pia travelled down to london and attended a cake decorating seminar at Searcy's 30 Pavilion Road by award-winning couture cake-maker to the stars and owner of Little Venice Cake Company, Mich Turner.

Mich shared her cake-decoarting tips over a divine 3 course lunch, which was in partnership with Sainsbury's Magazine.

Searcys' Georgian Town House in the heart of Knightsbridge was the fabulous venue and a very enjoyable day was had by all.

Pia said "It was simply a lovely afternoon and can't wait to get back into the Vanilla Pod kitchen!"

Autumn at the Vanilla Pod Bakery

As autumn blows in we've been super busy at the Vanilla Pod Bakery with loads of exciting events and seasonal festivities to think about. We won't mention the 'C' word just yet (but it is only 85 days, 11 hours and 34 minutes away!) but we have been lapping up the fruits of the harvest and experimenting with our new autumn flavours and looking ahead to Halloween and some terrifying treats!

We've also been doing our bit for the student community of Gloucestershire and had a great day at the Fresher's Fayre last week promoting our campaign "I'm a student and I NEED cake!" Well we wouldn't want the future of our country starving to death would we?! If you're a student and you NEED cake, get in touch with us at the Vanilla Pod and we can offer you 10% off your order if you show us your valid NUS student card (offer subject to change and terms & conditions apply).

Last Sunday was spent at the beautiful Pitville Pump Rooms for the Kids One Stop Shop launch which was loads of fun. Showers of sprinkles and swirls of buttercream as we encouraged the kids to get creative in decorating their own Vanilla Pod cupcake. On the same creative note our cupcake workshops continue to be a great success and with more planned over the next few weeks why not come to an evening filled with icing sugar clouds and rainbow's of buttercream? Please do book early to avoid disappointment. Our next workshop will be just days before Halloween on Tuesday 26th October so expect plenty of ghoulish decorations and may be we could share some ghostly stories over a coffee - all taking place at Red Pepper Café, Cheltenham.

As summer draws to a close peak wedding season is over and we now look to wedding fayre season. This Sunday we will be back at Pitville Pump Rooms where will be exhibiting some our prettiest cupcakes and will be on hand all day to talk to happy couples and discuss ideas, inspirations and prices. More importantly we'll have plenty of delicious samples to try.

In the meantime we are busy trialing and ever-improving new and seasonal flavours including Sticky, Toffee, Spiced Pear, Carrot & Nutmeg, Ginger Bread and Pumpkin & White Chocolate. Meringues!!!

This week we have been busy baking meringues! Yes that's right, after watching the BBC's "The Great British Bake Off", we were inspired to bake scones and meringues. Which turned out to be very yummy indeed.

We would take our newly found meringue skills and bake a lemon meringue cupcake (which was also the request of a client). Pia took a picture and you can see the results to the right. The cake had a lovely light lemon sponge with a deliciously fuffy meringue top. A new favourite at the Vanilla Pod Bakery.

Cupcake Decorating Workshops

Vanilla Pod held our very first cupcake decorating workshop at Red Pepper Coffee Lounge on Tuesday evening, and we had a very splendid time. Clouds of icing sugar, rainbows of food colouring, yummy cupcakes and a whole host of fun was had by all.

Pia was very impressed by the creativity from all the ladies who attended the workshop. At the end of evening we called upon Ziggi, who works at Red Pepper, to judge the 'best designed cupcake' competition, which was won by the lovely Ceri. She took home a charming little cermanic cupcake decoration from cheltenham's Kath Cooper .

Midsummer at the Vanilla Pod Bakery

Well we are having a wonderful Summer, packed full of events and exciting new opportunities! We have had great fun at Paws in the Park, Race for Life Cheltenham, The Cheltenham Food & Drink Festival, Montpellier Midsummer Fiesta as well as numerous Wedding Fayres throughout the region.

We've launched our new website and demonstrated the art of cupcake decorating in aid of Cotswold Care Hospice at Egypt Mill in Nailsworth, Pia was interviewed on BBC Radio Gloucestershire last Friday providing valuable insight on how to launch a successful business during a recession. Also Vanilla Pods' beautiful cupcakes have provided the centerpiece for scores of weddings and our new stockists include The Green Coffee Machine on the Prom and Scoffers on the lower High Street - phew!

We’ve been so busy recently that we’ve expanded the Vanilla Pod team, you'll no doubt meet Ellie, Emma and Charlotte either in the bakery or at one of our forthcoming events.....

Later this month we'll be launching cupcake decorating workshops, these will be held in the coffee lounge at Red Pepper on Regent Street, one of Vanilla Pods' existing stockists. Settling In

We are settling in nicely at our new kitchen unit in central Cheltenham, and I have to say I absolutely love it. It's small but perfectly formed, we now have 3 ovens and lots of surface space which I am very excited about! Click here for photos of Kitchen by Sabrina Sarl.

We are still currently baking cupcakes to order, but hope in time to sell cupcakes direct from the kitchen as well, as we are only a 5 minute walk from the Promenade. What's been happening!

Wow, what a mad couple of the months The Vanilla Pod Bakery has had! Been so busy haven't had time to blog! But have just worked out how to blog from my mobile so the Vanilla Pod page will be updated a lot more.

So what has been happening over these last few months.....

**WE HAVE MOVED! Yes, that is right we now have our very own brand new shinny HQ. Located in the courtyard of Formal House, St George;s Place, Cheltenham we have a small but perfectly formed kitchen to bake from. We are currently still only baking to order, but watch this space as we are constantly updating where we are selling our fabulous cakes from.

**EMPLOYEES! With the big move we are now looking for one part-time bakery assistant to help with the baking of delicious cupcakes and other bakery treats.

BBC Radio Gloucestershire

We are very excited at Vanilla Pod HQ as we are going to be on the radio! BBC Gloucestershire to be precise! The programme will be aired the week after Christmas and is about how businesses in Gloucestershire have grown from ideas around the kitchen table.

The lovely Faye from the BBC popped by this afternoon to interview me and we had a good old chat over gluten free cupcakes...and endless cups of tea. I told Faye all about how I started the business, to couping with the current recession, to the future of the business. Can't wait to hear it.

CUPCAKES AND CHELTENHAM CHRISTMAS SPIRIT

The Vanilla Pod Bakery will be taking a stall at the first ever Bath Road Christmas Craft Fair in Cheltenham this Friday 4th to Sunday 6th December 2009). Located in a huge marquee in the Exmouth Arms, Vanilla Pod will be selling a wide range of Christmas inspired cupcakes as well as launching their new Christmas gift box range. Cupcakes will be able to be purchased individually or as ‘pick-your-own’ selection boxes. Tempting flavours on offer include Vanilla and Brandy Butter, Mince pie flavour, Chocolate Orange, and Chestnut, as well as favourites Double Chocolate and Classic Vanilla. Alternatively customers will be able to purchase beautifully packaged Christmas cake cupcake gift box.

“The Vanilla Pod Bakery is very excited to be involved with the first Bath Road Christmas Craft Fair and we hope it will become annual event. Vanilla Pod is going to have lots of Christmas inspired cupcakes on sale to get everyone in the festive mood”, says Owner Pia Cato “This will be a great event and we can’t wait to see you all there!”

The Christmas Craft Fair will showcase over 30 local craftspeople and is the perfect event for purchasing unique Christmas gifts. There will also be a grotto with Santa visiting between 2-4pm on the Saturday and Sunday, a treasure hunt for children and lots of festive bunting, mulled wine, a variety of live entertainment and a large Christmas tree to get everybody in the mood!

Organised by local community group Cheltenham Connect the aim is for this to become an annual event, that will bring people from all over Cheltenham and beyond, and will be promote the idea of 'Buy Local for Christmas' as widely as possible.
